We all have procedures we go through on brew day. I also have one for the LHBS. I always ask for my hops first, just to be sure they have them. They always do....
Well, today, I didn't. I was just getting there 15 minutes before closing, and I don't like to inconvenience anyone.... so....
I weigh and crush my grains and go to check out, asking for my hops. We have a case in the books, but we can't find where they are, so No... Damn. I was getting Simcoe, as I like the faint grapefruit flavor it lends. Now, I'm new enough where I can't pull a replacement hop out of my hat, so I ask for their opinion. Australian Galaxy. Hoping it comes out OK,
A positive is Galaxy will have a passionfruit note, my wife likes passionfruit...

"Filled with mingled cream and amber
I will drain that glass again.
Such hilarious visions clamber
Through the chambers of my brain

Come to life and fade away;
Who cares how time advances?
I am drinking ale today."

That sounds real good. Would try it in a wheat beer!
