How does the brewery equipment calculate the output of beer?

The output of beer brewing depends on the type and size of brewing equipment, how much beer is brewed, the size and number of fermentation tanks, and the fermentation cycle of beer are all influencing factors to consider. When putting a brewery together, what factors can affect the total output of a brewery? As with most things in brewing, it’s not as simple as thought.

Not All Beers Are Created Equal
Omething to consider when calculating a brewery’s annual production is house time. How long beer is kept in cans before it is ready to be packaged? If you’re brewing a lager, it might sit in tanks for 4-6 weeks before it’s ready. The longer your beer sits in the tank, the less you can brew.

Estimate The Size Of Your Brewery
The best way to estimate brewery system size and cellar configuration is to calculate beer production over a year, as this will allow you to better estimate the number of fermenters you will need.
How much beer do you plan to brew each year?
How much beer do you plan to sell per month or per week when your brewery is up and expanded?
These are the main questions we ask first after approaching a client.

Brewery Capacity Calculation
For simplicity, we will count 20 fermentation and conditioning production cycles per year. fermentation and maturation/storage in CCT unit tanks.
We calculate that: average cycle fermenting + conditioning takes 17-18 days, 350 days per year divided by 17 days = 20 production cycles per year.

Calculating Brewery Capacity--Cellar Tanks
You can have many types of tanks in your brewing process:

fermentation vessel
Brite beer tank​
Horizontal maturation tank
Serving tanks

The tank chosen affects the brewery’s output and labor costs. For example, if you are a brewpub, having a sink is a viable option. There are some breweries that keep cans in their cold rooms and pour beer straight from those cans at the bar. This saves labor so the keg beer is not used for draft beer.

Number Of Containers In A Brewery
The design of the brewery also affects the amount of beer that can be brewed on site.
Most common settings:
3 Vessel System: Combined mash/lauter tun and kettle/whirlpool
3 Vessel System:Either as a combined mash/lauter tun with separate kettle and whirlpool OR separate mash and lauter tun with combined kettle/whirlpool 4 Vessel System:A separate mash, lauter, kettle and whirlpool

More brewery containers means you can produce more beer in a day. On a 2-container system, it might be possible to brew 2 times, but that would be a long day. Some breweries have 5 or 6 vessel systems and can brew more than 6 times a day. In the brewing process, it is not the number of cellar tanks that limits the output of a brewery, but the design of the brewery.
