Diablo IPA - BlackDuck mod...

Looking for BlackDuck to chime in here...

So I am trying to burn through the rest of my MR Beer refills and I've got 2 cans of Diablo IPA.

I'm planning on brewing these on 9/28 hopefully. I'm gonna do them both together as a double batch in a 5 gallon setup.

I had written down notes on BlackDuck's Diablo mod on the old site, scaled the hop additions from .25 oz. to .5 oz. for a double batch, and hopefully I got this right...

The plan:

1) Boil 1 gallon of water
2) add 2 Brewmax Pale LME's
3) Hop additions - 1/2 oz. columbus @ 20 min, 1/2 oz Centenial @ 7 min
4) Add 2 cans Diablo at Flameout
5) Bring Wort up to 4.25 gallons approx (probably will do 4.5)
6) S-33 yeast, Ferment 21 days in Primary
7) dryhop with 1/2 Cascade with 5 days left.

Thoughts?

Looks tasty fine to me! However, Columbus has been dead for over 500 years and may be a little gamey (ducking and running)! :jumpy:

Hey ssrock...from what I remember without looking back on my mod, yours looks pretty good. When I have a chance tomorrow I'll try to find my post on the old MB site and confirm. Two things that caught my eye at first. 1. Regarding your hop schedule: The Diablo is plenty bitter but not very aromatic, you might consider doing 1/2 oz Columbus at 15 minutes and 1/2 ounce Centennial at 5 minutes and possible do 3/4 ounce Cascade for the dry hop. And 2. Is there a reason your choosing S-33 for the yeast? S-05 may be better suited for this recipe.

Again...I'll try to find my old post and let you know if my thoughts differ after reading that one. Stay tuned.

After discussing with BD, I did a short flavor/aroma boil and then dry hopped my Diablo Mod with .75 ounce of Centennial (3 days) and it was awesome.

That was before I read that dry hoping works best if you drop them in 24 hours prior to bottling.

Still have not tried that.

Thanks for the feedback.

I'm not opposed to playing with the hop schedule, I have at least an ounce each of Cascade, Centennial & Columbus i can use for this brew, if I need more I can always pick it up at the LHBS.

I picked S-33 because that is what I jotted down in my notes so assume that is what you used. I have S-5 too so I can go with either or.

I think you're right about the S-33 now that you mention it. That's probably the yeast that MB sent with the recipe, so that would have been what I used.

Safbrew S-33 Dry Ale Yeast 1.00 unit, Yeast, High ABV: Temperature Range: 59°-75° F 11.5 GRAMS

Notes

Recipe Notes:
Bring 1/2 gallon water and Brewmax Pale LME to boil.
Set timer for 20 minutes.
T-10 minutes, add Columbus hop commando.
Flameout, Add Diablo HME to wort and mix well.
Pour 4 qts cold water into LBK. Transfer wort to LBK.
Top off with additional cold water to the 8.5 qt mark on LBK, take OG reading
Pitch yeast and wait 30 minutes.
Aerate well and ferment for 3 weeks total
Dry hop Centennial commando for the last 5 days.
Cold crash and bottle.

EDIT.......When I do this next time, my hop schedule will most likely be this:
.25 oz Columbus for 20 minutes
.25 oz Centennial for 7 minutes
.25 oz Cascade 5 day dry hop
This will change my IBU's from an 80 on the original recipe to 82. Not a big change, but should be a good change for the flavor and aroma.

Thanks for grabbing that post for me. You saved me some time and grief trying to find it. Looks like it's all there.

ssorck..based on my comments, yours should be good to go. I never did make it again so I can't comment if my suggestions did the trick or not. But yours looks pretty darn good.

The :borg: comes through again man oh man what a great bunch we have here.

Hope yours comes out tasty ssorck. BD's Diablo is the only MB recipe that we drank without having to wait for several months of conditioning.

Good to hear Brewbirds, though my pipeline is (finally!) starting to become drinkable!

It looks like tonight is the night I'm gonna brew this sucker, a few days ahead of schedule!

The deed is done!

Double batch in a fermenting bucket as per the origins post, wound up with about 4 and a third gallons.

OG is 1.054.

Funny you should ask...was downstairs loading some bottled beer tonight and smelled her coming off the airlock, smells fantastic! Really looking forward to this one now...
