I use mostly dry yeast, but sometimes when I want a certain strain or need a lot of cell count, then use liquid and make a 1 Lt or 2 Lt starter. This week I did a double two Lt and going to decant. Thinking instead of throwing the decanted beer away, I might try to maybe add a little more dme and ferment it out to use when I make malt vinegar. I like experimenting and if it doesn’t work then I know not to do
It again.

I think Brulosophy did an experiment something like you mention years back but I don't recall the outcome.
I'm interested in how this turns out.
