I am going to brew a hef with it this Friday and doing a starter Thursday. If I am reading the date right, that is the freshest yeast ever got from more beer. Doing a 2 L starter and splitting to try it on something else too.

Just be aware too big of a pitch will likely kill all the banana if it operates like normal wheat beer yeast.

I haven't done a hef in so long I forgot how much krausen there is. Fortunately I use a blowoff tube because it pumped a ton of yeast through the tub and into my jar of Starsan. No harm done, but had I not had a blowoff tube this would have been messy. Pitched at 12:00 on Saturday and it's done blowing yeast out, but still bubbling away solidly today (Tuesday).

Did you end up with any yeast in your blowoff container? I did - quite a lot actually.

I did a 2 lt.starter in mid April and used 1/2 in in a Hef type beer 60/40. It has been in my fridge since then sealed up. Took it out last night and decanted and let it sit to come to room temperature. Made a wheat DME starter a few hours ago and back in business. That is some good yeast..
