I just double checked and all of my simcoe hops are 13.2% AA.


I've got one pack of Nottingham left, and I just happened to buy some pilsner in my last order. And my basement is in the mid to high 50s until spring, so some of the tettnager could cgo toward a "lagale" (my term for a "lagerish" beer made with a clean fermenting ale yeast at low temperatures).

Since I've got 10 oz of that and some home grown hallertauer, I may have to harvest some of the Nottingham yeast, order more pilsner grain and do it a few more times. Or maybe I should get some corn (or cornmeal?) and use some distillers malt and try to do something closer to an American lager.

That's actually a difficult style to pull off, so I try one every once in a while for the challenge, but having 5 gallons to go through . . .
