I'm looking for a good, but simple, all grain saison recipe. Nothing fancy, just true to style saison. Any body have a recipe you would like to share??

Here are two that I've done that I liked...

Saison #1

Cara-Pils 6%
Crystal 20 6%
Corn sugar 8%

Perle (perrrr-llllayyy) 60min 9IBU
Nugget 20 min 14IBU
Goldings 5 min 1.5IBU
Saaz 5 min 2.5IBU

WLP568 (fermented at 80+)

1.066 OG
1.019 FG
6.25% ABV
27 IBU
4 Est SRM


Saison #2 (GF version)

Wheat malt 10%
Cherrywood smoked malt 10%
Honey 3%
+ 2 boxes Kashi 7 grain cereal (puffed hard red wheat, brown rice, oats, barley, triticale, rye, buckwheat, and sesame seeds)

Mt Hood 75min 20IBU
Pride of Ringwood 60min 28IBU
Cascade 10min 6IBU

Cubeb berries 0.6oz 10 min
Orange peel 0.6oz 10 min

wlp670 (fermented at 75+)
Clarity Ferm 1 vial

1.074 OG
1.007 FG
8.75% ABV
54 IBU
5 Est SRM

Thanks Swen...They look good, but I was looking for something more sessionable like Jeff's recipe. I guess I should have said that in the beginning.

As for Jeff's recipe, I wonder what a little lemongrass would do to that? I have some laying around.

Gotcha.

FWIW, I intend to do a session saison this summer as well with the Kashi as above... Haven't figured out the recipe, but planning on equal parts 2-row and wheat along with a box or two of the Kashi. Shooting for around 1.038 or something to hit a 4%er...

As for lemongrass... sounds like a winner to me. I love a subtle lemongrass in a wheat or saison.

FWIW, 100% pilsner or 90% pilsner + 10% wheat/oats will give you a nice saison too.

Doesn't need to be complex, doesn't need crystal or malty malts... it just depends on what you like.

Too much crystal and/or malty malts, and your more like a Bier de Garde then a Saison.

That's not a bad thing though either.
