New all-purpose lager/ale yeast

Post by swenocha »

Cross-posting this from the Bootleg thread for others that aren't following there. When we toured the yeast lab in Nashville, we were told of a project with Brulosophy, which for those that don't follow is a great beer podcast and website, to develop a true all-purpose yeast that can be used for any style... even lagers fermented at their normal temps. Intriguing prospect... brew all of your styles with just one yeast! This yeast goes to pre-order next week and will ship later in the month. I'm sure the Brulosophy will have some additional info, but here's what Bootleg posted today:

http://bootlegbiology.com/2018/02/28/of ... e-march-5/
Official Brulosophy Blend Available March 5!

That’s right, we’ve collaborated with the crew at Brülosophy to release their first official yeast culture!

The Brülosophy Blend is the only all-purpose, clean yeast culture meant to make almost any beer style! German Lager? Check! American IPA? Check! English Ale? Check!

Marshall and I first talked about coming up with a unique yeast culture at the 2017 Homebrew Con. It seemed like a crazy idea. How could a single yeast culture make so many different beers, fermented at a wide range of temperatures and still produce homebrew to style?

After some serious discussion, we came up with a blend that we thought just might make that possible. Luckily, the Brülosophy crew had a crack team of Contributors who could help test this blend in several different styles of beer.

The catch? None of them knew that they were all brewing with the same yeast culture, and most assumed they were given yeast that matched the specific style of homebrew they were making (English Brown Ale, American Porter, Hoppy Blonde, German Pilsner [cold AND warm fermented], and a New England IPA).

Each Brü Blend beer was then given to a panel of tasters who were only told the style and nothing about the yeast culture used. They then rated each beer 1 to 5 based on categories like: perceived hoppiness, maltiness, attenuation, off flavors, style representation and overall enjoyment.

The vast majority of tasters rated each beer highly in regards to style representation AND overall enjoyment!

The results speak for themselves though. To get a more in depth breakdown of the results, stay tuned for the release of the Brülosophy podcast and blog post next week (we’ll update this post with links once they’re online).

OK, I’M SOLD, SO HOW DO I GET THIS WONDEROUS PACK OF YEAST AWESOMNESS??

Your first chance to order The Brülosophy Blend is during our next Internet Pre-Sale, which begins Monday, March 5 at Noon CT and ends on Sunday, March 11. All orders will then ship the week of March 26.

This will also be your chance to pick up fresh packs of:

I'm kinda digging the Sour Solera Blend (Spring 2018) description. I might have to try that or the Funk Weapon combo pack.

The blend looks to be coming available and it makes hairy eyeballs, so it must be fun.

The funk weapon pack doesn't say it's coming available soon.

The new world saison says it is though, so I might grab some of that.

I'm not convinced the "all purpose" yeast would make a good stone fruit ester infused British beer like you would get with Ringwood or West Yorkshire, or those oak like esters you can get with some London ale strains. Reading the descriptors and such it sounds too clean. So it might make a nice porter or something else that has a grain bill that provides a lot of flavor, but something like a simple pale with just some EKG or Fuggles, it's not really going to turn out like a real CAMRA type real ale then, because it needs those esters to gain the complexity. Americans would still like that probably, but it's not going to be "authentic like".

But I could be wrong, maybe it does make something like that if you ferment at 68 or something.

Mash, IIRC, the owner told us specifically that it would not be good for English styles.
I think it is intended to make clean ales and lagers at a wider temperature range.

It mentions "English Brown Ale" but that could fall into the category of what I described as "grain bill derived flavor".

I'm also confused about how the same yeast, just with different temperatures, can make many beers. However, even 001 at different temperatures gives the beer different flavors. However, it seems this yeast is even more adaptable. We'll see. To go from an IPA to a German lager is quite a spread.

According to the lined article, it's a yeast blend. So my guess is that the specific yeast that ferments the batch is the one that does best in the given conditions.

If you're thinking about harvesting this to get the same thing over time, I think you should adjust your thinking.

Well, I'm very unlikely to order more each time I brew. When I harvest it, I'll post my results.
I just ordered it.
