Kolsch yeast in a Oktoberfest

Post by berryman »

What you guys think about using a Kolsch yeast in a Octoberfest style beer? I bought a morebeer ag kit back in April with WLP820 with intentions of brewing in May and lagering all summer and that didn't happen. I want to brew it as a ale now and thought about using 05 but I like the way my Kolsch's come out with WY2565. Thoughts.

Honestly, I think it would turn out great, especially if you treat your water to soften any hop bite, and cold lager it in the keg or bottles for a little while before pouring it.

I agree with Mashani. That could produce a nice clean malt driven festbier. Give it a go!!!
