Keep in mind that the "issues" are not tasted by all and do not ruin his beers.
Like any of us, Paul is his own worst critic. Or, he is a super-taster for the off-flavor/metallic taste he is describing (which is very possible).

This is an effort to improve already good beers, not correct an issue with bad beers.
