If it was me, I'd go with just 1oz of chocolate, and a bit more crystal, like 2-3oz of C40 and 2-3oz of something darker like C-80 to get more color and flavor. 2oz of chocolate and you might start to taste it and you don't want to be making a pale porter I assume. I am due to brew a few more brews and trying to come up with some ideas. One thing I have not done is a RED.

Maybe in a wheat, with some lighter hops , like citra, would be nice. And of a Saison would work nicely too.

Will be bottling this one in a couple of days. The combo of stout and 04 seems to slowed down the fermentation so I giving it a few more days. But the sample was really good tasting.

I'm in, really need to get back to the brewing again now summer is over. I'm a 2.5. Extracts with hops , grain steeps, and adjuncts experience. Still not ready for mash or 5 gal batches yet.

1lbs extra dark DME
10mins UK first gold
2 Oz's Maple extract
8ozs lactose
Saf 04
Thinking about doing this again if it comes out good, and adding raspberries at 2 weeks
