Welcome back! I'm glad you got through that hard time alive. I'll be interested to see what you can do, as I've considered low alcohol brewing myself. As to the malt, I've read that you should taste it to determine if it is stale. I'm sure some of my malt is older than two years. Keep us posted.

That's a good start I think. I don't recall if there were recipes that combined two cans plus enhancer. That will give you pretty high gravity. Maybe double your yeast?

Welcome aboard! When trying to achieve a recipe style, I use Brewer's Friend Recipe page. Input the ingredients and it will show which styles match. I don't know if they have the BrewDemon recipes in their database though. Your other option is to use different extracts in the BD conical. Good luck, ...

It's been a while, but I did alright with ice packs and a cooler. I used to wrap the ice packs in a hand towel and put them on top of the fermenter. The cooler went in the coolest spot in the basement.

I thought about glycol and a dorm fridge when I was using a cooler with ice packs. I bought a chest freezer and temp control instead. There are times I do two different batches with different temps, but one gets ambient with minor assists.
