Out of curiosity, is there a reason not to use food grade silicon tubing instead of vinyl stuff (except for higher cost)? I'd think the food grade silicon stuff would not degrade or pick up or put off any flavors or unwanted stuff and be more resistant to critter build up and just plain last longer...

Most conversion is done in the first 10 minutes from what I have gathered. An easy way to figure that out would be do a 60 minute mash, pull a gravity sample at 30, 40,50 and at 60. Gravity points will tell you for sure where it stops converting. My two cents!

More carbonation could come from a couple things, leave them at room temp for 4 weeks to condition, then refrigerate for at least 24 hours for the CO2 to absorb into the beer.
