This was pretty damn good. Like I said this simple recipe lets the yeast shine. Not bitter or sweet, goes down easy.

My first thought would be a dash of cayenne pepper. When I season food with it, it seems to add heat with little impact on the flavor. Perhaps use bootstrap molasses? Never used it, can't vouch for flavor. Or you could get your "bite" from making this imperial strength. Another avenue woul...

Just noticed we have 404 members now. As one of the early joiners it has neat to watch membership grow. Even though most members rarely if ever post, they often provide a LOT of traffic just lurking. So kudos to our active members, and those who just come here to learn from them.

So I'm drinking this. Officially in rotation. It's spicy/rye/dry with bananas and bubblegum like fruity esters, and hints of dried fruit. But actually more bubblegum then bananas. Also, don't start rebuilding until you consider what you might do next with the house. For example, if you were talking about an addition, now might be the time given that things are "opened up", no pun intended. We actually managed to upgrade the front window that got destroyed to a bay ...

This recipe is a nice simple saison for a 2.13g batch.

3# Wheat DME
.5 oz Sterling @ 20 min
Belle Saison yeast

The saison yeast shines here with a little help from a tasty hop variety/
