Welcome to the Borg! You my friend are a busy man! LOL It sounds like you have a pretty good handle on brewing and smoking things, it seems to be a natural cross over for many of us homebrewers. I'd be interested in hearing about some of your favorite recipes.

I've been really interested in this but really didn't need another way to brew beer but using it as a small beer dispenser is a really good idea. I need to revisit this.

The longer you can let it condition the better it's going to turn out. It a good 2 to 3 weeks to let it condition will allow it to carbonate and condition. I know a lot of people will experiment by putting a bottle in the fridge at 1 week, 2 weeks, 3 weeks and comparing the taste. It's a good way to...

I'm a little late to this but I'm sure it's fine to use. General Shelf Life for Dry brewing yeast typical shelf life of 2–3 years from production if stored properly. If you want to make sure to get the most of it you can put it in a starter to give it a little boost before hand.

Checked the FG of the first batch brewed with this system and it came down to 1.010 FG giving me a ABV of 5.3%. Considering this was my first batch on the new system it's slightly lower than normally expected (5.8% ABV) but still respectable.
