??? Sounds like the yeast are on steroids. You may need to shock them into submission. Maybe cool them in the refridgerator for a few days, then transfer to clean carboy again for aging.

Well I live in the California Desert, summer is 100-125 degrees and winter can get as cold as 30 degrees so my brewing is done in my closet. Room temp. Is always between 65-80. My conical holds at a constant 72-75 in the summer no problems so far, on my 5th batch. Cant imagine much change in the win...

I have brewed both of these, I like them way better than anything at the local store, no more bud for me. Enjoy.

So what are the measured ingredients, recipe

Example 6 gallons water, 8 lbs. Wheat, 2 oz. Hops

I think you could use the ingedrients if they were stored at room temp. they are sealed in air tight cans/bags. The kits usually sit on a shelf in a store room for many months. Just check the use by dates to be sure. If in doubt buy new grains the sost is not that much.
