Re: cabbage water mash?
we had about 2 gallons of cabbage water. now some ppl actually drink it and it is healthy for you. I'm not keen on just drinking it straight so I wondered about mashing with it. I figure 2 gallons mash water would make a nice beer... and I could sparge with regular water so the total volume of cabba...

Re: lacto fermentation of veggies...anyone?
if you buy grocery veggies like carrots and cabbage... do you wash them? just rinse them in water? with all the foodborne listeria cases if you washed the vegs in soapy water and rinsed, wouldn't this kill the lacto bacillus normally found on them that makes things ferment? do you need whey? or just...

Re: excessive trub...thoughts?
I did notice that the fermentation seemed more robust than usual for us05. normally 05 forms a tiny blanket of dense krausen for me, then chugs away slowly. this ferment made a higher kruasen and seemed to be largely done in a week. so 'break matter' is really that disgusting? lol... the words snott...

did a partial mash kit from NB... about 60% grain to 40% lme. I used whirlfloc ( I think ) in the last 8-10 mins of boil. when transferring to the fermenter I run everything through a sieve to catch excessive hops as I toss them into the boil loose. this also serves to aerate. on bottling I noticed ...

silly question time... yeast starters...
if you have a 2l yeast starter that has been spinning for 36 hrs (example).. is it safe to assume that the yeast are relatively evenly distributed in the sample and that pouring off half into a fermenter will net you about half the available yeast cells? (if not allowed to settle out first?)

90 minute scotch ale
doing NB's karls' 90 schilling scotch ale this sunday (weather permitting) .. using wlp028 yeast, fermenting at 68-70f. re caramelization: will the 90 min boil produce enough of that caramelly goodness? or should I do the boil 2qt/1lb dme to 1 pint and add that to the boil before flame out trick? ca...
