I think it's a stratification issue. I just brewed a wit with lme and dme and mini mash. target og was 1.05. stirred the heck out of it and did a hydrometer test which said 1.05 on the bean. since the fruit juice test on the hydrometer vs the refractomer was only off by about .002 im chalking it up ...

ok.. going with the gold malt lme, some caramalt and el dorado with the ahtanum hops.. a dry hop...
making an ipa.

stir before sampling: no temp - the refractometer uses a thin swipe of a sample. it should have been room temp by the time the cover glass went on, which is close to the temp the meter was graded at. scale and weight checks out. ok heres my available hops .. hallertau tetnang ahtnam summit Amarillo moteuka sorachi which would pair nice with Eldorado.. ? what style? figures id have 4 oz of Eldorado. no wonder I got them so cheap if they turn things into baby aspirin and jolly ranchers lol. I do the math ... for a 3 gallon batch with the malt I added and steeping grains I should be hitting 1.05. I do the boil for an hour of 3 gals.. top to 3 gals... hit 10 brix. 1.04. ive done the math every which way but in Chinese and backwards... plugged and chugged on various recipe calculators and...

never had Eldorado before .. got 4 oz on sale from hbs. ive got 6 lbs of northern brewer gold malt lme to spare. any good recipe ideas to showcase the Eldorado with the malt? only problem i can see with this: wife uses baking soda in the water. 1 tsp alone will jack the ph of the mash to almost 7ph. i would have to add lactic acid or acidulated malt to knock it down. or she has to boil it without it... which can make the cabbage tough.
